white truffle risotto

for the first time in our 8-years of marriage, we own a slow cooker. this was our inaugural meal. truly satisfactory.

white truffle risotto with swiss chard
(adapted for a 7qt slow cooker from lynn alley's the gourmet slow cooker)

3 tbl olive oil
3 shallots, minced
3 cloves garlic, minced
3 cups arborio rice
1 1/4 cups dry white wine
8 cups chicken stock
1/2 tsp salt
2 sprigs fresh rosemary
1 small head swiss chard, ribs removed, chopped small
1/4 cup butter
1 - 3 tsp white truffle oil (to taste)
6 tbl fresh grated parmesan
salt/fresh ground pepper (to taste)
juice of 1 lemon

heat a large saute pan over medium heat and add the oil. add the shallots and garlic and saute for about 3 minutes, until light golden (sprinkle with salt to help soften). add the rice and stir for 1 minute, or until opaque. add the wine and cook, stirring occasionally, for about 10 minutes, until the liquid is reduce by two-thirds.

transfer the rice mixture to the slow cooker and add the rosemary and stock. cover and cook on high for 2 hours. add swiss chard evenly onto top of rice, cover and cook another 20 - 30 minutes, until the rice is firm but tender. stir in the butter, truffle oil, cheese, and salt and pepper to taste just before serving. spoon servings, give each a little squeeze of fresh lemon, and serve immediately.

cake divine

bake time! (again). can't stay away from the kitchen. this time, i joined kat's kitchen to watch her whip up an untested recipe: chai cake. we flipped it (made it gluten free) and made it sane on the sugar levels. it was so so heavenly. i mean, i melted when i took the first bite. now, granted, i have been on a cleanse diet for the last two weeks (since Christmas), so i may have been slightly giddy over the prospect of CAKE in the first place. but i promise you, if you make this, it will make you happy.

it called for (almost) equal parts flour and sugar. whaat?? how do people eat these things? so, we knocked it down by half, and used half xylitol and half honey. worked like a charm.

Chai Cake w. Honey Ginger Cream

1 and 1/3 cups of milk
6 chai tea bags, without added sweetner, such as Tazo
4 whole eggs
2 egg yolks
2 teaspoons of vanilla extract
2 and 3/4 cups of Pamela's Gluten Free Bread Flour Mix
1/3 cup honey
1/2 cup xylitol
4 and 1/2 teaspoons of baking powder
3/4 teaspoons of ground cinnamon
1/2 teaspoon of ground cardamom
1/2 teaspoon of salt
8 ounces of unsalted butter at room temp.

Preheat the oven to 350 Degrees F. Grease the bottom and sides of the pans and line with parchment paper. Grease the paper as well.

In a small saucepan bring the milk to a simmer over low med-low heat. Add the tea bags, careful not to let the paper tag fall into the milk. Remove from heat and allow the tea to steep for 5 minutes. Remove the teabags and squeeze out the milk. Let the chai milk cool completely.

In a medium bowl mix the eggs, egg yolks, vanilla, honey, and 1/3 cup of the chai milk. Whisk together.

Combine the flour, xylitol, baking powder, cinnamon, cardamom, and salt in the bowl of a mixer. Beat on low for 30 seconds. Add the butter and the remaining chai milk, on med-low speed.

Raise the speed to medium and beat until light and fluffy. Add the egg mixture in three additions scraping the between additions. Divide the batter evenly among the pans.

Bake the cakes for 26-28 minutes, or until a cake tester inserted in the middle comes out clean. Allow the cakes to cool in the pans for 10 minutes.Remove cakes from pans and peel off parchment paper. Cool completely.

To assemble the cake place one layer flat side down a serving plate and top with half of icing. Spread to the edge and repeat with second layer. Top with candied ginger pieces.

Honey-Ginger Cream
1/3 cup honey
10 ounces of cream cheese at room temp
6 tablespoons of unsalted butter at room temp.
1/2 teaspoon of fresh grated ginger {or substitute w. 1 1/2 tbsp finely minced crystalized ginger}

Place all the ingredients in a food processor. Pulse to blend together, then scrape the sides of the bowl and pulse until smooth.

they make the best fresh-baked, gluten free cupcakes i've tested to date. perfectly moist, perfectly textured, not too sickeningly sweet, super fun classic and creative flavors. wish it could have been my bakery...but then again, i don't. :)

aslan on our wall

we've been art-shopping for over 2 years now, looking for a significant piece for above our fireplace. we were looking for something that says something about "joe and jen", about the home are desiring to create in the Lord, and the joy we have together. we've been waiting for something perfect...and it had to be big enough to hide the tv.

our friends donna and malcolm arrived from england 6 months ago, and we suddenly got the bee in our bonnets to commission malc to paint us something. the idea of aslan came straightaway, and concepts were volleyed back and forth. at last, the specifics got nailed down, and malc set to work. we only saw a sketch mockup of a old-version lion on a 8x14 piece of paper. imagine our overwhelming awe and giddyness when malc presented this to us on Christmas eve! custom frame, custom canvas, it's his entire creation based on our one (sometimes vague) idea.

it's been named The Founding of Narnia, from our favorite chapter in Lewis' Magician's Nephew. in the book, aslan sings creation into existence in all the joy and power of a king-creator. it's such a beautiful part of the story, so glorious, and it reminds us of THE creation story. God, with the power of His Word (Christ, the King), made all things - and it was all good. His joy, His life, His Spirit gave us life. we wanted that on canvas, and malc blew us away. this aslan (and if you could see the depth of his eyes) now greets us in the morning, welcomes us home at night. we love it! we're totally geeked out. Lord-willing, our kids will grow up under this regal, loving, humble, joyful lion and will be pointed to Christ.

the new year

aside from lighting the (second) Christmas pud, 10 of us got together (whitings, carlsons, carlsons, freemans, watkins) to celebrate this past year, praising God for His mighty hand in my parents' lives, and praying over them and each other as we begin '12. How we have seen with our eyes and touched with our hands that God is our Provider, our Savior, our Friend, our Life!
